Can I not change my default applications before?

In some cases, yes. When Apple published iOS 14 in 2020, the update allows you to modify the default applications and the default browser applications of your iPhone. You can also modify a few other categories before iOS 18.2, such as the keyboard, but the options have been dispersed in the settings.
