Carrot cake energy bars

Abandonment bought in store and do DIY with these delicious carrot and energy bars of dried fruits. Keep them in the refrigerator for a sweet snack to grasp without refined sugar and a good dose of fiber.

Ingredients
- 3/4 cup (60g) rolled oat
- 1/2 cup (54g) cut almonds
- 1/2 cup (60g)
- 3/4 cup (83g) carrots, grated and dried with paper towels
- 3/4 cup (120g) Dates of Medjool with bites
- 1/2 cup (30g) grilled of dried coconut not sweet
- 1/4 cup (40g) dried pineapple pieces
- 2 teaspoons of orange zest
- 1 1/2 teaspoon of ground cinnamon
- 1 teaspoon of vanilla extract
- 1/4 teaspoon of salt
Instructions
Preheat the oven to 350 ° F (180 ° C). Place oat, almonds and nuts on a baking sheet and cook until they are slightly toasted, 10 minutes. Reserve and let the mixture cool.
Put the carrots, dates, coconut, dried pineapple, orange zest, cinnamon, vanilla and salt in a culinary robot and a pulse until the mixture is well chopped and forms a ball, about 30 pulses of 1 second. Add the oat and nut mixture and treat, stopped to scrape the sides of the bowl once or twice, until the nuts are finely crushed, 2 minutes.
Line a 5 x 9 inch bread pan (13 by 23 cm) with a plastic film. Press the dates mixture in the pan evenly. Cover and refrigerate until the mixture is firm to the touch, about 2 hours. Cut into 8 bars and wrap individually in a plastic film. Keep the bars in the refrigerator for up to 2 weeks.
